1. Grate the zucchini and remove excess water.
2. Beat eggs with oil, sugar, zucchini, and mashed bananas well.
3. In another bowl, mix all dry ingredients.
4. Add all wet ingredients and mix them well.
5. Divide the mixture into 2 loaf pans lined with parchment.
6. Bake in the oven set at 350°F for 60 minutes or until a toothpick comes out clean.
