1. Preheat oven to 300.
2. Grease 6 cups of a muffin tin or line with paper or silicone liners.
3. In a large bowl, mix softened cream cheese, egg, erythritol and vanilla. Stir until well combined.
4. Pour batter into the muffin tins. Bake 18-20 minutes. Remove when centre jiggles slightly.
5. Let cool 30 minutes. Cover and chill in refrigerator.
6. Optional: Top with fruits.
