Ingredients

Directions

1. In a large mixing bowl, add olive oil, lemon juice, garlic and quinoa. Season with salt and pepper if desired.
2. Mince the red onion and place in the bowl with olive oil, lemon juice, garlic and quinoa.
3. Finely chop the tomato and cucumber and add. Gently mix together.
4. Remove stems of parsley, and finely chop the leaves. Add to the rest of the ingredients and gently mix until combined.
5. For best flavour, refrigerate for 30 minutes before serving.
