Preheat oven to 175 °C. Line 2 baking sheets with parchment paper. |

Combine all flour, baking soda and salt in small bowl. |

In a large bowl with electric mixer on low beat brown sugar, peanut butter and butter until combined. |

Add egg and vanilla and beat until well blended. Add flour mixture and beat until blended. |

Stir in chopped chocolate covered peanuts and peanut butter chips. |

Roll tablespoons of dough into 1" balls. Dust hands with flour if needed to prevent dough from sticking. |

Place balls on cookie sheet 2" apart, press down and form 1 1/2" rounds. Bake until set, 8-10 minutes. |

Rotate baking sheet half way through cooking. Let cool on baking sheet on racks for about a minute. With spatula transfer cookies to racks and let cool. |
