1. | Preheat oven to 190 °C. Spray the muffin tin with non-stick spray. |
2. | Dice the chicken, onions, red and green peppers and place them in the bottom of 6 muffin trays evenly. |
3. | In a large bowl crack the eggs and whisk. Add egg whites, salt and pepper and whisk until well blended. |
4. | Using a soup ladle pour the egg mixture over top of the chicken and vegetables until each tin is 3/4 full. |
