Stuffed Peppers

Turkey and rice stuffed red peppers.

Ingredients

Directions

1. Chop then sauté onion in olive oil.
2. Add garlic, cook until fragrant.
3. Add minced turkey, break apart and let brown.
4. Add chicken broth, diced tomatoes (with juice), Worcestershire sauce, and rice. Let simmer 20-25 minutes until rice is cooked, add water if needed.
5. While rice is simmering, bring large pot of water to a boil. Cut tops of peppers and remove seeds. Boil peppers for 4-5 minutes then remove from water.
6. Coat bottom of oven-safe bake dish with a layer of tomato sauce. Place peppers bottom side down in dish, fill peppers with rice and turkey mix.
7. Top filled peppers with thin layer of tomato sauce. Add a pinch of shredded Parmesan to each if desired.
8. Bake at 350F for 30 minutes.
