Directions

1. Butterfly the chicken.
2. Stuff soft goat cheese in chicken, and seal it with a toothpick.
3. Rub the chicken with salt and pepper, and bake it in the oven for 20 minutes.
4. To make balsamic glaze, add olive oil to a pot and add shallots. Wait until they’re translucent and then pour in balsamic vinegar. Bring to boil and turn to low for 10 minutes.
5. Once reduced pour on top of chicken, and continue to bake at 375 for another 20-25 minutes until the chicken is no longer raw/pink.
